To make this Panzanella, it needs mozzarella. I don’t think having more than one dish with mozzarella would be a bad thing. I hope it’s a hit!

I added chickpeas in addition to the mozzarella because we ate this for dinner so I wanted it to be a little more substantial. I was afraid there wasn’t enough dressing but it goes a long way and is very tasty. Another winner from Kate (and Cookie)!
